Fresh Watermelon- Kiwi Popsicle's

Servings: 6 Popsicle's

Prep time: 20 minutes


Ingredients:


  • 1 small/medium watermelon cut into 3 cups

  • 1 Tbsp agave, or honey

  • 2 Tbsp sugar

  • *Handful of fresh blueberries, (optional)

  • 4 fresh kiwis

  • 2 tsp agave, or honey (for kiwi)

Equipment:

  • Blender

  • Popsicle Mold (I used a 6 count mold)


*Levels of sugar may vary depending on ripeness of your fruit. Adjust sugar/ sweetener levels to your liking.


 

Directions:


  1. Once all your ingredients are gathered, grab your whole watermelon and cut it open. Cut the watermelon guts into a medium size dice. 3 cups should be good for this recipe. If you have more left over, feel free to save them for later or double this recipe to make more pops!

  2. In your blender, combine diced watermelon, agave, and sugar together until smooth.Rinse your blender out. After, pour mixture into Popsicle molds. Only fill about 3/4th of the way.

  3. Grab your blueberries and push them into watermelon mixture. Try to space them out if possible. The goal is to mimic real watermelon seeds using the blueberries. ( *This step is optional, you do not have to use blueberries at all)

  4. Grab and peel your kiwis. Place peeled kiwis in blender, and combine with agave. Blend until smooth. Pour kiwi mixture on top of the watermelon mixture. Stopping at the edge of the Popsicle mold, making sure to not over pour.

  5. Place Popsicle stick inside of mold, and set in the freezer for an hour minimum. Once your mixture is frozen solid, remove from freezer and enjoy! (If you're having trouble removing your Popsicle , run some warm water over tip of the mold until the Popsicle slides out.)
