Bomb Blueberry Pie Filling

Serving: Est. 3 cups

Time: 10-15 minutes


Ingredients:

4 -4 1/2 cups of fresh blueberries

3 TBSP cornstarch

1 cup sugar (I prefer cane sugar)

2 tsp lemon zest


Equipment:

Medium size sauce pot

Heat resistant spatula or whisk

 

Directions:

  1. Always rinse and clean your fruit. ALWAYS!

  2. Combine all your ingredients in your sauce pot. Turn stove on medium heat.

  3. Blueberries will start to release it's juices. Once this happens, constantly stir mixture and press down on berries. Don't let it over heat or boil.

  4. Mixture should take about 10-12 minutes to thicken. Once it appears to your desired thickness, remove from heat.

  5. Transfer to a glass container, (preferably mason jars cause they're cuter...duhh), and let it cool.

  6. Enjoy!

  7. This filling can be eaten by itself or used in a number of recipes, the possibilities are literally endless.


 

Cleaning your fruit is a must. Remember to do it... always.






Combine all your ingredients in your pot.

(I used 1/2 cane 1/2 granulated sugar in this photo.)





Berries will begin to liquefy and thicken .








Place in a cute glass jar and let it cool. Enjoy!
